Simmer 20-30 minutes, adding more water as needed. Strain and discard plant materials in a fine mesh strainer and combine remaining warm juice with raw honey to taste, whisking to combine completely. Pour into clean, sterilized jars, cool, and refrigerate for up to 2 weeks, or freeze for long term storage.
